Easy As 1-2-3 Chicken Soup

When you’re a cook as gifted as my friend Sangeeta, you don’t need a long list of ingredients to stir up a sensation. You take 5 simple ingredients, give them 3 strokes of the spatula, a few seconds in the blender, and pour out the world’s steamiest chicken soup.

Ingredients
  

  • 6 pieces skinned chicken with bones
  • 1 tsp each garlic and ginger minced
  • 2 onions finely chopped
  • 1 tsp butter
  • Salt and black pepper to taste

Instructions
 

  • Fry the onions, ginger and garlic in butter
  • Slide in the chicken pieces, and break them lightly with your spatula
  • When the vegetables and chicken are nicely coated with butter, salt and pepper, add 21/2 cups water and cook until the chicken is tender.
  • Sieve the broth, reserving and shredding the chicken pieces. Blend the rest of the ingredients in a mixer.
  • Return to the pan of water, and cook the paste again. Add the shredded chicken. Stir in a little white vinegar before serving.
